Re: cookie recipes?
I am a major fan of chocolate chip cookies myself and in an effort to come up with a healthier cookie I came up with this recipe. The cookies turn out perfectly moist and chewey and my very picky husband claims them to be his favorite. I use organic whenever possible and believe it does make a difference in the final result.
4 oz. (1 stick) butter, softened 1/2 cup applesauce 1/2 cup brown sugar 3/4 cup sugar 2 extra-large eggs 2 tsp. vanilla extract 1 cup all-purpose flour 1 cup whole-wheat pastry flour 2 tsp. baking soda 1/2 tsp. kosher salt 12 oz. Chocolate Chips - your choice of white, dark, or milk chocolate Optional: Chopped pecans, walnuts, macadamia nuts or coconut.Preheat oven to 375 degrees F. Combine in a large mixing bowl, softened butter, applesauce and sugar. Cream until a silky texture appears. Add eggs and vanilla into the sugar and butter and mix thoroughly.
In a separate bowl mix together flours, baking soda and salt. Slowly add the dry ingredients into the wet mixture until completely incorporated.
Now add your favorite Chocolate Chips and other ingredients, if you wish. Bake for 9-11 minutes on an un-greased baking sheet. Cool on a wire rack and enjoy!
