I don't know if you can "cause" GD with your diet, but I know you can resolve it with diet & exercise (and not have to rely on insulin). You can also screw up your test results if you have a lot of sugary foods the day of your test.
I have a family history of diabetes and was self monitoring using my dad's testing supplies and was a bit high so I was tested at 20 weeks. I passed but will be test again around 28 weeks.
Diet can certainly contribute to GD but generally speaking it's hit or miss and depends on your bodies ability to produce insulin and break down glucose. Eating lots of sugar and carbs doesn't somehow tell your pancreas to produce less insulin.

I took my 1 hour at 26 weeks & my 3 hour at 27. (cause I failed the 1 hour!)
