  These look very easy, too.  Not a lot of ingredients.  Are they soft or crunchy?

  These look very easy, too.  Not a lot of ingredients.  Are they soft or crunchy?

  Kind of crumbly. Like the texture of shortbread.

  We make these every Christmas and they are soooo good. Except, in our family we call them Mexican Wedding Cookies. They melt in your mouth, crunchy on the outside and soft in the middle.

  The recipe from allrecipes.com is good - but I will suggest using a food processor to chop the walnuts to a very fine consistency. The cookies are hard to shape with large walnut chunks in them. I chop them to as close to a powder as I can get, and they're FANTASTIC. The oil in the nut really enhances the flavor of the cookie.
