Once my supply was established and my son weaned himself, I became an EP (this was when he was 9 months old) I have a great supply then and now with this one too, but I was able to get away with 4-5 times a day.
If you are still establishing your supply (meaning, in the first couple months), you really need to pump 8-12 times a day. Basically every time your baby eats a bottle, you need to pump. That will average out to every 2-3 hours. When you start adding solid foods between 4-6 months you may be able to get away with pumping less, but it is basically supply and demand. If you pump less, your body will not think it needs to make as much milk. As the baby grows, it may be more difficult to keep up with his increasing demand if you don't pump as often, or have become accustomed to pumping only every 5-6 hours. It is a LOT of work to EP (especially long term), and my hat goes off to the ladies who do.

The other reason that I pump so little is that our freezer is full (we bought a small chest freezer just for milk) and i have filled a third of a large freezer at my parents house. We just don't have room to keep freezing milk that he isn't using right away
I EP and I used to pump at 9,1,5,9,1,5 but now since DS STTN I am pumping only 5 times a day. I cut out the 1am time. When I pump at 5am I am getting between 9 and 13oz. Normally I get 6 oz per pumping.
