You could try out the fake meats - I know a lot of kids who love those! Morningstar is a good brand, and you can find them at pretty much any grocery store/regular store, including Target and Wal-Mart.
Peanut butter and almond butter are also good options. Liliana likes it spread on a bagel or spread with cream cheese or jelly on bread.
Tofu is technically beans, but we have less gas issues there than other beans, and there's eggs along with dairy. Some vegetables have more protein than others (cauliflower, broccoli, asparagus). If/when she's old enough, nuts are also a good source.

We give DS veggie link sausage in the morning, he loves it.
Sometimes I also give him veggie burger (either cut up in bite-sized pieces or crumbled into whatever like mac and cheese).
I've found it''s easier for him to chew the veggie meats. Good luck!
