Why is roast so much better the day after?

We had family over for dinner last night and I made a roast. It was good. We had a lot of leftovers, which we froze. I just re-heated some and it was SO awesome. Much better than last night. I'm thinking I should just make it ahead of time and freeze the next time we have company. Not really, but the whole time I was eating I though "THIS is what I wanted everyone to eat!"

  • That's funny, my DH and I said the same thing today. We had a roast yesterday for dinner and leftovers for lunch and it was so much better today!

  • I have to make two roasts to even have leftovers - but they're a planned leftover for me.  I use roast for chili, tostadas, enchiladas, beef stew...you name it.  That's one of my favorite things to make, just because it's so freaking versatile.

    This one was easily five pounds. We get half a cow from my IL's every year, so I can't pick and choose the weights. I agree, they are awesomely versatile, but I don't like to cook something and use the leftover meat for something else, because then I don't feel good about freezing it. It would work if I could ensure that what I made would definitely be eaten that night, I guess. I typically just carve up the leftovers and freeze them in individual tupperware containers with the veggies/pan juices and treat them as homemade TV dinners.
