Our LO will be born when it's cold (probably snow and ice). Would you put the little, short-sleeved onesies underneath all her clothes? Sleepers and sleep sacks? How many of the newborn sizes, 0-3, and 3-6 would you get?

Depends on how big your baby is. Christian was 8 lbs and 9 oz and fit into newborn stuff for a few weeks. I'm glad we didn't buy anything in that size, everything we used was gifts.
We don't put anything under his sleepers. We've been using blanket sleepers and will occassionally put socks under the footies to keep him warm. That's about it!
He is in Carter's 0-3 right now, Carter's 3-6 is too big on him, but close.

I put short sleeve onesies under sleepers and her outfits (unless the shirt is already a onesie). When gets colder, I may even use long sleeve onesie or lighter cotton jammies under sleep sacks.
DD was born 7 lb 12 oz and wore NB until about 5 weeks. I didn't have much in NB size and ended up having to buy a bunch of clothes after she was born. She wore 0-3 mo until about 2 1/2 mo and is now in 3-6 mo. She is just starting to outgrow 3-6 mo and I'm buying a few 6-9 mo, but she is a big girl (15 lb 10 oz at 4 mo). I wouldn't buy too many clothes yet. You have no clue how fast your LO will grow and the clothes may end up season inappropriate. For example, my BFF has a DD three weeks younger then my DD and she still fits her 0-3 mo clothes.
I think every baby is different as far as what temp they are comfy in. My littel L is always cold (and the weather is cold now here too) I put onesies under everything. During the day L wears a onesie (long or short sleeved) then his outfit with sicks, when we go out I put a hoodie or thin jacket and a knit hat and a blanket. If we are walkign I put mittens on him too.
At night he wears a onesie a footed cotton sleeper and a sleepsack. I have tried just a onesie under the sack & he fusses. Most nights I also have to put a knit blanket half way over his body too. (He fusses when he is cold). I have tried the blanket sleepers with no luck so far.
I am glad I didn't buy tons when I was pregnant, I even find it hard to buy more then 1 size ahead now. L wore newborn ( I had none, he was early my mom had to go out shopping!) for 8-9 weeks and then only wore 0-3 months breifly, he is now between 0-3 and 3-6 months, I am starting to buy 6-9 month things now.
It really is going to depend on the size of your baby. My DD was 8lbs6oz and is now almost 6 weeks old and is still easily fitting into NB, she can wear a few 0-3 but they are big on her. I dont put anything under sleepers, i put a onesie under sleepsacks. It is warmer here then im sure it is there. Once it gets colder I will put a onesie under anything that isnt already a onesie.
I would wait to see what you need. I have NB outfits that were gifts that she has been able to get away with until now, its starting to get cold so I am having to buy NB clothes for the cooler weather. I hope she gets to 0-3 soon cause I have tons of warmer clothes in that size.
It is so hard to tell. DD is 11 lbs right now and still wears some newborn stuff. Everyone says she's a chunker, but she is long and proportionate. She wears her 0-3 stuff too... some fits, some is still too big.
Also, different brands really vary. Target's Circo brand runs a lot bigger than Carter's and Gerber is even smaller than both of them.
We swaddle or have a blanket over DD pretty much all day, so I tend to dress her on the lighter side (she seems to get hot easily and overheating contributes to SIDS). Right now she's got on a onesie and a warm swaddle. When I dress her for the day, she'll be wearing a long-sleeved oneside with pants. If we go outside, we'll put a jacket on her, as well as a blanket over her legs, socks and a hat.
She was born early and weighed 3lb 12oz at birth. At that point, even some of her preemie stuff was big. She wore exclusively preemie stuff from 3lb 12oz to about 5lb and is now in bigger preemie clothes and smaller newborn clothes at 6lbs. It really isn't a big deal to go out and get more clothes if you need them.
Our favorites -- fleece footed pajamas from Carter's. ADORE. & we pretty much keep him wrapped in a blanket all day.
granted, it's not that cold here. If it were colder, I'd probably put a onesie underneath or use heavier blankets.
He's 8 1/2 lbs and still in newborns. He swims in 0-3 and 3 month clothes.
