Need ideas for food to take to friend recovering from surgery

Ideas?  Normally I would do my awesome baked spaghetti, but my friend used to live in Italy and is married to a real Italian and, well...LOL  I know, it's silly, but I just thought I'd do something different. I was thinking of a butternut squash soup that I make that's always a hit at my dinner parties.  And maybe some cornbread muffins?  Any other great casserole ideas or anything?  I haven't decided yet.

I should add, my friend has a 17 month old baby (G's future husband) so kid-friendly ideas would be great.  She's not going to be cooking any time soon.

  • You could do a double batch of meatloaf and bake one loaf and freeze the other for them to have on hand.

  • How about a nice hearty vegetable soup? I would think that would be good w/the LO. It you make the chunks big enough of the veggies they can just pick them up.
  • MMMMmmm. Meatloaf!  DH will be really p---ed.  I haven't cooked in months. Embarrassed  I'm almost thinking I'll have to make two of everything anyway, so we can have some too! LOL  Meatloaf, I like!

    Fibroids.  I really don't know.  I'm really more thinking about food for her fam. Her mom will be here, but I'm sure she'd like to have a night where she won't be cooking, or just having easy stuff on hand to heat up.  I should probably be thinking along the lines of things that would freeze well?

  • That meatloaf sounds so good. And I like the cornbread idea too. As far as kid friendly goes, do you know if he likes baked macaroni and cheese? Jordin loves it. I also like a good chicken/cheese/broccoli casserole.

  • I like your idea of soup and cornbread.  In fact, if I ever have any surgery, I'll send you my contact info so you can FedEx that to me on dry ice.  Stick out tongue
  • Soup in individual containers that could be frozen for later meals.
  • Barefoot Contessa has a yummy meatloaf recipe (I don't even like meatloaf but I eat this one!)

    Paula Deen has a yummy taco soup recipe. But I like your BN Squash idea too.

    Enchiladas freeze well.

    I would add don't forget dessert! My friends and I joke that after surgery all we wanted was some homemade chocolate chip cookies. It's become a funny little tradition.
