I find if I cook 2 good dinners on the weekend, DH and I can eat those all week (i'm obviously not someone that has to eat something different every night).
Tonight is Chicken & Dumplings...very good cuz it has lots of veggies.
Tomorrow I think i'll make swedish meatballs from Cooking Light. It's one of our staples around here. Meatballs are made of ground chicken and serve with whole wheat egg noodles and steamed mixed veggies. Yum!
I'm type 1, not GD, but whatever. Killing time at work before I get to go home. ;-)
Tonight we're having turkey burgers with sweet potato "fries." They're not fried but roasted at a super high temp in the oven until they get sorta crispy. Tomorrow is chili. Thursday will probably be a slow-cooker lasagna, which might be scary for a GD diet I suppose, but because it's in the slow-cooker, there are fewer noodles and carby things vs. a normal lasagna. I can dig up the recipe if you're curious.
BLT with extra tomato and lettuce on whole wheat. This is my first dinner where I'll be testing afterward so I'm hoping I do alright - breakfast and lunch have been spot on so far! : )
Cream of chicken and wild rice soup with mushroom and dumplings in it and a nice glass of milk and salad. I made this last night for dinner tonight. ate it for breakfast because I just couldnt wait and for the first time in awhile I had a good number!
