We make Chicken Francaise, Balsalmic Chicken, Chicken Cutlets, BBQ Chicken..I need something new & simple! (I would rather be something I can bake)
Also, I told my DH I want to try Lamb because I always see it on Top Chef, so he got some but plans on breading it, but that's not what they do on the show it looks like its marinated in something. Any suggestions?

You can try lamb kabobs or lamb burgers on the grill. You have to be careful when grilling because lamb does have a lot of fat in it. My DH makes Salsa Chicken. Bascially you bake chicken breasts in the oven with salsa on top. When they are done, sprinkle cheddar cheese on top with more salsa. Very easy and really yummy!

For easy, baked chicken, I like to make the Campell's Cheesy Chicken and Rice casserole. It's not high-brow cuisine, but my DH loves it. It's just rice, chicken, Campbell's cream of mushroom soup, and frozen veggies, baked together.
For lamb, I like to marinate a boneless leg of lamb in soy sauce, lemon juice, garlic and honey, and then grill it. Slice it into thin strips and serve on naan or pita breads with tzatziki sauce and cheese for homemade gyros.

I make salsa chicken a lot, also chicken marinated in italian dressing, chicken parm, cheesy baked chicken - but my fav is plain ol' grilled chicken! yum.
