I have a few lbs of chicken defrosting in my fridge right now and I would love to make something that I could freeze and eat after the baby is born-any suggestions?

Chicken enchilada casserole
Shreadded Chicken, green chillies, cream of chicken soup, black olives and corn tortillas
mix shreadded chicken, green chillies, olives and cream of chicken soup. Layer tortillas, then chicken mix, and cheese in a casserole dish top with layer of cheese, cover then freeze.
Cook at 400 for 45 min or until top cheese is bubbly.

Other than enchiladas you can make any chicken casserole (like tuna noodle casserole, except sub the tuna with chicken!).
You could also cook some chicken with fresh bell peppers and onions to use later in fajitas.

I am making chicken pot pie right now to freeze!
I just put down a pie crust add frozen veggies and cream of chicken and then top with a pie crust!
ETA! obviously you add the chicken too!
