s.f. cookies, cottage cheese, sf applesauce, sf pudding, sf ice cream bars, nuts (they make fabulous cocoa dusted almost or salt and vinegar cashews!), lunchables (the small size), yogurt, trail mix granola bars or Southbeach bars
My evening snacks (I can be more liberal on the carbs at night):
cookies and milk, cheese quesadilla, cheese fries, ice cream with nuts, cheese and crackers, etc. If I want something really carb-tastic, then I eat a cheese stick and some slice deli meat before, then I eat the carbs.
Dinners:
I have been able to eat almost anything in moderation. I love pasta too. Two meals that have worked for me are spaghetti and meatballs - eat lots of meatballs and only about 1/2 cup pasta and roasted chicken with ravioli - I ate 4 large goat cheese ravioli with saiuce and the rest chicken and veggies. The key is making the carb your side dish and not your main course. Other fall back meals have been - steak, veggies and french fries (I CRAVE fries), mexican foods like tacos/quesadillas/etc., burgers or hot dogs with a big salad, chicken dishes such as chicken picatta or other marinated chicken, pork chops with veggies, etc. The only thing I really can't eat is rice so I just avoid. Potatos seem to work really well for me so that's usually my carb of choice.

south beach bars are good for snacks on the go - 10g protein and 15g carb
I also eat a ton of greek yogurt (half cup has 10g protein and 4g carbs) with a little bit of granola or fruit or even a sugar-free fudgsicle (skinny cow one's are ok, haven't tried any others) or sugar-free pudding or 100-calorie packs of cookies.
Dinner....
Why would you have to live on chicken and veggies? Have a pork chop. A steak. A hamburger with a small bun (or without a bun at all). A nice veggie-tofu stirfry. A piece of fish or some shrimp.
I'm ok with rice or potatoes - homemade mashed potatoes have actually been really good to my numbers and a serving is a half-cup which is a decent amount (it's a cafeteria-sized scoop). So that's just one serving of carb and my meal plan allows me 3 carb servings at dinner. I usually save one for a fruit or sweet and spend the other one on extra potatoes (but only if I'm just ravenous, usually I can't eat another serving) or a starchy veg.
I haven't been eating much pasta because I'd want more of it than I can have, but no, it doesn't have to be off limits. I had one of those Healthy Choice steamers with chicken and broccoli and pasta and did good with it.
For my evening snack I usually have toast w/pb, or low carb yogart, or wheat thins fiber selects and cheese.
For dinner I found low carb multi grain buns by Oroweat that are thin and I usually make turkey burgers w/cheese and a vegi side. Another dinner I eat is salad with chicken on it and whole wheat toast. When in a mexican mood I have an inside out burrito: Ground turkey, taco seasoning, cheese, beans, etc in a bowl instead of a tortilla.
I was a big pasta eater before GD and haven't had the guts to try it since getting diagnosed, though my nutritionist said that I could have a 1/2 cup of whole wheat pasta and ground turkey and vegis and low sugar tomato sauce. I think I will experiment with this, this week.

My favorite snack is wheat thins with cream cheese. I have a thing for cream cheese
As for pasta - I had good numbers with Barilla Plus. I still had to watch my portion size, but it was delicious.?
