Elyse favs are beets, zucchini, cauliflower (with cheese). She'll eat veggies before anything else (unless it's steak) Dosen't like broccoli or asparagus at all!

I have just made two recipes from the 'deceptively delicious' cookbook (by Jessica Seinfeld). The Mac & Cheese has squash puree in it, and the meatloaf has carrots, onion & celery....both DH and DD gobbled it up (DD comes by her 'no veggie' thing honestly!). It's a bit of a pain, but it works...and the rest of the recipes are great too!
It may be the texture. Try mashing other veggies so they are the same consistancy as the sweet potatoes.
Mix other veggies in with the sweet potatoes so LO gets used to the flavor.
Does your DC eat pasta? Try cooking little pieces of zucchini/bell peppers/tomatoes/etc (pick ONE) in with the pasta. S/he probably won't even notice it.
You can mix a spinach puree in with pretty much anything without a kid noticing. Especially things like tomato sauces.
When DS is being picky, we make him 'quesadillas' with whatever meat/veggie we're eating. Somehow, if it's in a tortilla, he'll eat it! Kind of like hiding food, but once it's all cut up, he sees it. Still, he eats it!
DD is a fruit face - I swear she's 85% fruit. But she'll eat cucumbers most of the time. Other options that sometimes work are sweet corn, yellow beans, and cherry tomatoes.

DD loves it all - carrots, corn, broccoli, cauliflower, peas, green beans, etc. All the standard stuff. We normally buy frozen and just steam them. Sometimes I put spray I can't believe it's not butter or whatever on it, but sometimes plain. Maybe if you hide them inside of something?

Also, Horizon has a new kiddie yogurt that combines fruit and veggies. We tried the apple/butternut squash and DD loved it. They also do strawberry/carrot.
DD also loves to eat veggies when they're in chicken pot pie or shepherd's pie, rather than just plain on her plate.

If your DC likes sweet potatoes, try...
carrots. Then carrots with other things mixed in.
