When to introduce harder foods?

The post about dipping sauces got me thinking...  When did you or will you introduce hard foods like fresh vegetables and fruits?  We have still been serving soft fruits (peaches, nectarines, grapes, plums, etc.) and cooked veggies and I'm not quite sure when to try things like apple slices, bell peppers, carrots, etc.  I'm freaked about choking, but I also don't want to baby him too much and possibly hold him back.  TIA!

  • We give DS a variety of "harder" foods - some of which he can't really bite/chew (only 2 teeth with 4 more coming right now).  He's had bell peppers, but he can't seem to bite them off very well, but if they are diced he does fine.  He's also had apple slices (no skin because he can't bite through that) and he gums those just fine.  He couldn't bite an uncooked carrot yet.

    Part of the choking risk is the shape - so cut harder foods lengthwise so they are skinny and could slide down if necessary.  Good luck!
