help me throw a grown up party

dh's bday was yesterday, and mine is friday, so we're having a joint party on fri night. i'm going to bake some treats, and well have plenty of alcohol, but i need to have some other snacks/appetizers as well. give me some ideas!

ps - i thought about doing a mexican theme, but then didn't indicate that on my evite, so i can't decide if that would be weird at this point. i'm happy for mexican or any origin ideas!

  • mix cream cheese with taco seasoning

    spread on tortillas, then layer salsa, cheese, lettuce (basically any taco toppings you like)

    roll up and then cut and stick in a toothpick to keep it together!

     

    i have another layer dip but i don't think i could get you the recipe tonight. i'd have to facebook my cousin for the recipe. it's a taco layer dip that we had at our family reunion a few weeks ago and as a person who doesn't eat spicy spicy food/jalapenos, i ate this and it was sooooooooooooo yummy!

    • 1 tablespoon olive oil
    • 2 Vidalia onions (1 pound total), finely chopped
    • Coarse salt and ground pepper
    • 1 cup reduced-fat sour cream
    • 2 ounces reduced-fat bar cream cheese, room temperature
    • 1 1/2 teaspoons white-wine vinegar
    • 1/4 cup finely chopped chives
    • Potato chips, for serving

    Directions

    1. In a large skillet, heat oil over medium. Add onions; season with salt and pepper. Cook, stirring frequently, until golden brown, 12 to 15 minutes. Let cool to room temperature.
    2. In a medium bowl, combine onions, sour cream, cream cheese, vinegar, and chives; season with salt and pepper. Chill dip until slightly thickened, about 1 hour; or cover and refrigerate up to 2 days. Serve with chips.

  • I love Mexican food and drinks and I think it is a great theme for a party and easy to make/eat. You could do Coronas, Dos Equis and/or red and white Sangria and/or Margaritas (different flavors if you want to be creative... I just had a blood orange margarita last Friday night- so good.)

    And, quesadillas, red, blue and yellow corn chips w/ different salsas, guacamole, black bean dip, corn salad... Mmm I love mexican.

    eta: My favorite dip:

    2 cans black beans (rinsed), 2 chopped tomatoes, i large clove garlic, cilantro (about 1/4 of a fresh bunch), 1 chopped large yellow onion, i jar salsa, juice from 1 lime.  These are estimates, I usually wing the amounts, you can adjust to taste. Mix and chill before  serving. 

    It's best w/ Lime Tostitoes. It is so fresh and flavorful and completely healthy.

  • Check out my blog (LIS). I have a couple of Mexican appetizers on there.
  • Artichoke Dip (super easy, and people gobble it up)

    2 cans of artichoke hearts

    mayo

    parmesean/romano cheese

    mozzarella cheese

    garlic salt

    I don't have the exact recipe here, but you basically chop the artichokes, mix in mayo, and parm cheese, add just about a 1/4 cup of mozzarella as well as the garlic salt. Bake at 325 until warm. Serve with bread, pita chips, tortilla chips etc.

    I use a round Corningware dish and mix everything directly into that first. Just fill it up with all of the ingredients and bake. You really can't screw it up.
