One reason you do not rinse pasta is because the starch that is on it after cooking is what helps a sauce to adhere to it- once its rinsed off the sause won't 'stick'

Thank you! The best part is that he only does it in that outfit and I have to say- Liam buzz like a bee, and he will start 'flying' and going buzz buzz buzz...I about pee my pants everytime!
not to rinse pasta after it's been cooked from Alton Brown
Really? Do you remember why not? I always rinse my pasta, though I haven't a clue what makes me do that.
like a pp said, rinsing removes the starches which are what actually help the sauce to "stick" to the pasta. The only time you should rinse pasta after draining is when you are going to use it in a cold dish and when you are not going to sauce and serve immediately. In those cases, rinse under cold tap water to stop the cooking process. If you watch Rachel Ray enough, she will tell you this too!!
This isn't a fact or anything but my family started a christmas tradition of opening one gift on Christmas eve after I saw the Cunningham family do this on Happy Days.
