So how has everybody been doing this week with eating & working out?
I'm sharing a brand new recipe this week that I actually just tried for the first time today and it was delicious:
Quick Lettuce Wraps
Iceberg lettuce leaves
Red Pepper Hummus
Pine Nuts
Cooked chicken breast (cut into cubes or shredded)
Cucumber
Pretty simple prep- Put a couple tablespoons of hummus on each lettuce leaf. Top with chicken, pine nuts and diced cucumber.
This was the perfect lunch today, cool and refreshing for a super scorching day.

I did the 30ds this morning, followed up by my smoothie.. I haven't thrown any spinach in it yet though.

I've been slacking.. I did it Friday, Saturday & then yesterday. So, I skipped a few days when I shouldn't have. I'm trying to adjust to waking up earlier still. Oook.. I'll throw the spinach in it tomorrow. I think I'm just worried about what color my smoothie will turn, but I know that's lame.
Do you know how much weight you've lost so far? You're doing such a good job sticking to this healthy lifestyle!

I haven't tried it yet. I hope I can try it for lunch Friday. But i have started adding spinach to my strawberry banana smoothie in the morning.

Sounds good! I would eat sans chicken because that's how I roll, but it's perfect for a hot day when you don't want to cook!
Well, I am farther north where it's not so hot, so I eat soup even in the summer. Here is a super easy soup recipe that's very healthy:
Black Bean Soup
2 cans black beans, drained
1 cup of your favorite salsa
1.5 cups vegetable (or chicken if you wish) broth
sprinkle of cumin
Toss 1 can of black beans, half of the salsa, and 1/2 cup broth into a food processor or blender. Process until smooth. Pour into saucepan. Add remaining ingredients and simmer until hot. Top with a small dollop of organic sour cream, if desired. This is appr. 4 servings.
I've been making lettuce wraps with tuna salad (only a tiny bit of mayo) for lunch. Filling....

You bet. I sleep better and I feel much less bloated.
A simple Chicken Recipe I have is;
Marinate Skinless Chicken Breasts in Fat Free Italian Dressing for at least 3 hours.
Grill on BBQ or on stove.
I serve with Serve with Brown RIce and a veggie.
whaaaa? you just might be the first person I know who doesn't like cheese. mm.. a waffle sounds yummy, and that chicken looks really good! I love putting cayenne pepper on my chicken.

Green Monster Smoothie
1 Frozen banana
1-2 Tbsp of peanut butter
1 cup of skim milk
Large handful of spinach.
Put it all together and blend well. You end up with a super scrumptious banana / PB tasting smoothie that is green.
You can't taste the spinach. Promise!
I did this exact dinner last night, except I marinated Swordfish in Italian dressing and then grilled it.

I have already cut out cereal for the past two weeks and I think I've lost half a pound just doing that. But you are talking to the cinnamon crunch queen!
Not if you make sure you add at least 1/2 cup of the broth with it. You can add as much of the broth to the food processor as you want, as long as you have a decent size one. Too much liquid and some machines make a huge mess when you hit the button LOL.
It's not super gourmet but it's easy and healthy and cheaper than buying canned stuff.

I can't say enough good things about adding greens to your smoothies. If you want, you can also try some raw kale or collard greens (minus the 'spine').

Gingham! yes cereal with the delicious milk,..mmm. and when you eat honey comb the milk tastes just like whipped cream when they get soggy.
But I digress..
I am eating half of a double fiber english muffin with a tablespoon of peanut butter and a chopped banana piled on top. Soooo yummy! Sometimes I will cook a single sausage soy link too for extra protein. It is amazing how full that keeps me until lunch. With cereal I was always looking for the office donuts!
Me too, i LOVE cereal! I try to eat the healthy cereals, Fiber One has alot of good ones.
I've just never been able to just the little pizza slice and I wanted to. lol
Try Kashi Go Lean and Go Lean Crunch. Those are two regular breakfast staples in the house of Ckell.
I totally switched to this for a while. It was very filling! But I still binged it.
What do you girls thing about putting certain foods completely off limits? Or is everything okay in moderation (you have that kind of control)??

CK, do you use frozen spinach or fresh spinach in the soothie?
Fresh only. I think using frozen would mess up the consistency.
I kinda believe in the whole clean eating philosophy i.e. don't eat things that are processed (frozen dinners, stuff out of a box etc) only "real" food.
I will confess that I allow my a few special treats here and there.
