Grocery list for BR?

I'm looking for...

-easy meals for one (and snacks) that I can do alone, beyond sandwiches! Not crazy about TV dinners, but will do some.

-meals for 2 that DH can make when he's home thats still easy but not as easy as what I'm doing

-things that are a little lower cal...if I'm going from working FT to laying around, I'm going to gain weight like crazy if I eat whatever I want.

  • I eat a lot of fruit these days.  DH can cut up certain things like cantelope or whatnot ahead of time which helps.  My snacks are mostly granola bars, string cheeses, crackers, nuts, pita bread with hummus.  Oh...and I shamelessly admit I am addicted to marshmallows for some reason right now.  Embarrassed Crazy I know.

    Some dinner ideas are: spaghetti, frito pie, tacos, chicken he can just cook and then you can eat it for several meals with things like rice, veggies, etc.  We usually have a frozen pizza on Friday's bc that is DH's day to not have to cook and he loves pizza.  My DH usually cooks pretty good meals but I dont mind leftovers so when he is working his shifts and not here I will usually have that. 

    And yes, I seem to be gaining weight like crazy right now which sucks.. I really am looking forward to getting my body back after baby is born.  I don't generally do anything with artificial sweeteners in it though (personal preference) so I can't really help you out there.  A lot of the things I find that are reduced fat or sugar free have them in there so I just choose to eat different things.

    Been on BR for 11 weeks now and this can be tricky - especially since being pregnant can sometimes make me crave for random.

    Egg salad is always in the fridge for a quick sandwich. ?Prepackaged salad greens and dressing. ?Pre cooked chicken breasts that you can warm. chop and eat with salad. ?Precooked salmon that you can have with salad or one of those microwavable Country Crock mashed potatoes. ?Hamburger Helper Cheese and Hamburger Mac - super easy to sautee the ground beef and add the mixes...total 5 minutes on my feet to make. ?Pre made burgers, uncooked, that you can easily cook in a pan that takes a few minutes for quick fresh burgers. ?Ore Ida fries that you can microwave, pre packaged in frozen food section and super crispy even without frying. ?Lots of fresh fruit for snacks, and yogurt, cheese sticks. ?My husband is a great cook, so he'll usually do something for dinner for the both of us for dinner. ?Hungry Man meals (half a fried chicken with mashed potatoes and corn), etc is one thing that I do have as far as mircrowave dinners. ?Stouffers Lasagna (frozen) ?is also something that we have had for dinner for both hubby and me. ?

    For all the precooked stuff or pre prepped stuff, my husband will usually do these on Sunday night and leave them in the fridge for me for easy access throughout the week. ?When its just too crazy, he picks up food from a restaurants for dinner after work, but orders extra dishes for me to have for lunch the following few days. ?I'm the one who makes the grocery list, so I make the list according to what we need, and what I may feel like having that week. ?I then create a list of what needs to be precooked or pre prepped by Sunday night. ?

    I have lots of snacks - triscuits, wheat thins, microwave pop corn, fruit, Pirates Booty, Veggie chips, cheese sticks and yogurt to help with the in between meal munchies. ??

    DH has been doing the weeknight cooking in our house since he moved down here, since my work hours are so long.  We normally have chicken or pork or steak (chicken and pork sauteed or grilled, steak grilled) with a steamed veggie and uncle ben's rice.  Lately the corn on the cob has been really nice, so we have that 1-2x a week.  I like zatarain's also, so we have that every couple weeks-- the low salt jambalaya with chicken... it's easy and takes about 30 minutes.  You can eat the leftovers for lunch.  That is the only leftover Iike to eat. 

     I normally eat sandwiches for lunch.  I have been eating them with a nectarine or a peach.  The nectarines looked great this week, but they are ubersweet and nasty, so... I have been forgoing them and eating DH's peaches.  He has been eating my nectarines.

    As for snacks, I have tons.  Triscuits with rondele garlic and herb spread, chips and salsa, fruit roll-ups (50 calories each....  but they are not satisfying... they just taste good... I eat like 2-3 at a time... hehehe...), strawberries, blueberries, watermelon, cantaloupe, nectarines, peaches, dried mangoes, oreos and milk, PB crackers (in the package), PB and toast, PB and bananas... I like a variety.

    I have tons of water bottles.  If I get sick of water, I use flavor packets.  The raspberry and lemonade are my faves.  I also have some cran-raspberry juice in the fridge.  I was on a cran-grape kick early in my bedrest days, but it got sickening.

    DH and I go out for a meal 1-2x on the weekend, as I am allowed some small outings.  This keeps me from going too crazy.  And I eat the leftovers for my lunches.  And DH's leftovers too.
