My fridge/freezer died and we lost everything including all the babyfood I just made for the next month. Starting over from scratch at the store today.
I am looking at it as a good opportunity to not rebuy stuff that is bad for us.

Marinated Salmon with corn and rice on the side. I wanted to make Cornish Hens but I guess I forgot to buy them last time I was at the store.
I really need to dip into my recipe books and get something new going!
My H works OOT M-F so I rarely make a hot meal during the week, and if I do, I grill or make meatless spaghetti, etc.
Tonight its grilled cheese and soup
We've been grilling A LOT. Tonight we are having pork tenderloin with grilled pineapple, corn on the cob and onions, with a salad. Last night we had grilled salmon with a spice rub and honey drizzled over it (grilled on a cedar plank), the night before that we had steaks. Tomorrow night, chicken. We just grill up a bunch of veggies with it. It's so healthy and tastes yummy.
I also love throwing some chicken breasts in the crockpot with a jar of salsa, it gets really yummy and shredded and putting it in some corn tortillas fried in olive oil with homeade guacamole, lettuce, and tomatoes. Sometimes I add some black beans.
We do a lot of fish and shrimp in the summer. This is my favorite shrimp recipe:
Melt a stick of butter in a large pan and once it's melted, mix in 1 TBSN Worcestershire, 1 TBSN hot sauce, 1/2 teas. pepper, 1/2 teas salt, 1/2 teas dried thyme, and 1/4 cup fresh squeezed lime juice. Once it's bubbly, add in 1 lb. of peeled de-vained shrimp and cook a few minutes on each side until just cooked through.?
In the meantime, split a baguette down the middle and sprinkle with olive oil and a little bit of salt and pepper. Put it under the broiler until golden brown.?
The bread is delicious dipped in the sauce from the shrimp and the shrimp are super yummy and flavorful. ?

I used ground turkey and no sour cream (DH won't eat it) so it was tasty, light and healthy!

Chicken breast stuffed with artichokes. I won't do the tomato salad. Instead had a regular romaine salad and potato.
