i can never make good eggplant parm at home i wonder what the secret is?
I dust the eggplant w/ flour before dipping in the egg mixture. Once I've breaded it, I fry each side until golden in a 1/4" of oil. I barely overlap the edges of the eggplant for each layer, and am generous w/ the parm in the breading & I do a mozzerella/montery jack mixture for the shredded cheese.
