heck yeah it's safe!! The cheese, even though soft, will be pasturized, and on top of that, the cooking of the cheese will kill off any bacteria that might be there.

Cheese is safe overall.
The concern is unpastuerized soft cheese - this is something that is not readily available in the US or Canada. The brie etc you find in the grocery store is highly likely pasteurized. If you shop in specialty stores, you might want to double check but even there, most cheese is going to be pasteurized.
The cheese used in quesidillas will be safe.

Nope I wouldn't. I mean Mexico has one of the lowest populations on the planet, they're seriously going extinct as we speak, I guess that's why they're all trying to come here, for better food. LOL

I would imagine all the cheese in mexican food is pasturized so you are fine eating it. I'm guessing that most mexican restaurants just use plain old cheddar cheese in their food.

Um, yes. If it isn't safe to eat, my kid's going to be in big trouble! DH's family is from Mexico, and all I've been eating lately is rice, beans, enchiladas, tamales, and other tasty Mexican foods.

While everyone else wants to be smart asses and laugh, and C&P to the "we are pros" 06 months board, if it is authentic Mexican, be aware that some Mexican cheeses are unpasteurized and CAN be worrisome.
Avoid unpasteurized foods
Many low-fat dairy products ? such as skim milk, mozzarella cheese and cottage cheese ? can be a healthy part of your diet. But anything containing unpasteurized milk is a no-no. These products may lead to food-borne illness.
Unless these soft cheeses are clearly labeled as being made with pasteurized milk, don't eat:

1. hot cheese, while soft in texture does not = soft cheese in reference to what is safe to eat during pregnancy. Even if you did eat unpasturized cheese the chances of something happening are slim, you have a higher chance of food poisoning. Queso Fresco I buy is not pasturized but they do not even use that to make tradidional quesadillas because it does not melt well. It is best cold. Most cheese in the US is pasturized, but always read your lables and ask at a restaurant. THEY CAN TELL YOU. I have called to ask ahead of time to a greek place.
2. pasturized cheese when heated is fine.
So either way IT IS FINE. Every baby book out there covers this.

IMO a dumb question is one that is not thought through...something my 2nd grad teacher would say..."Is your brain in gear before you mouth is in motion?" This falls under that.

I spent a week in Mexico for work (i.e. not at an Americanized vacay locale), and dude... I've either done non-reversible harm to my baby or given it the nutrients it/I needed by choosing foods that I felt reasonably confident wouldn't make me sick as a non-pg person.
Tex-mex with Kraft-esque cheese is perhaps the least of our worries.
