hehe Actually, I've heard that if properly wrapped and stored, it's "okay."
We didn't have leftovers. DH and I had a croquembouche instead of a cake, so we wouldn't have frozen it anyway. But it's from a local patisserie, so we're just going to get a small one for our anniversary.

Depends how well it was wrapped before freezing. Ours was well wrapped, but I still wished we would have eaten it sooner. It had been soooooo yummy fresh and it was just ok for our anniversary.

LOL!! My DH insisted that we keep ours, so it's in the freezer. However, I'm thinking of buying a fresh duplicate to enjoy. I mean defrosted buttercream just can not taste anything close to good.
Ours was DELICIOUS!!! Seriously it tasted like it was brand new. I am sure on how well it was package right afterwards though. Hope yours is as delicious as ours was! Man, now I am craving cake!
When we ordered our wedding cake the baker told us to just eat the top while it was fresh then come back a couple weeks before our anniversary and order a new cake top. It was an exact replica of the original (plus a little message instead of the topper) and she did it for $10. AND, it tasted amazing! Here it is:
We got a complimentary anniversary cake from our bakery. I was still going to keep the top but when I got it home it just didnt look so great. We had fresh flowers all over it and I didnt think it would taste very good the following year. So we tossed it. Our anniversary cake looked exactly like our wedding cake did and it was soooooooo yummy and FRESH!!
Ours was DELICIOUS!!! I couldn't stop eating it! We had it pretty well wrapped. We had saved the entire top layer of our cake and we ate the whole thing in about a week (with some help from family).
I couldn't tell you. We ate ours a month later because it was soooo yummy at the wedding and I couldn't wait any longer
This is exactly what we did! We knew it wouldn't be good after a year, and it was too good to let go to waste. I think we left for our honeymoon a day before our 1m mark, so we made sure it was finished by then. and it was goooooooood.
dh put it in a cooler and we took it with us when we went out of town for our anniversary. when we got there he took it out and it had gotten wet and he was really bummed that he ruined it so to make him feel better i smashed it in his face and then he chased me around the hotel room trying to get me back.
We only ate the top of the topper (because the bottom half looked really gross). It kind of tasted like twinkies. I wasn't thrilled with it like I was on the wedding day.
We'll be married 5 years this year, and ours is still sitting in our freezer.... we just keep for getting about it. Maybe one year we'll figure out something creative for it that doesn't invlove eating it.
Re: So...what does the wedding cake taste like a year later?
I've been wondering this too.
Although ours is still up in MI in my parents' deep freezer....I don't think we'll be having ours on Sunday. lol
That was four years ago, and I can't even remember why, but I just remember us only taking one bite and chunking it : )
hehe

I have a friend that ate her entire top layer the day after the wedding.

Baby BOY!
If we hadn't left for our honeymoon at some ridiculously early hour the next day, that would've been me, lol.
ate ours last week, it was great!
I have no idea how it's going to taste...today is DH & I's one year wedding anniversary.
We'll be having our cake more for tradition than for the taste, but hopefully we will be surprised.
we only made it about 6 months before we broke into ours.....
and we threw it out. it was gross. granted, it wasn't wrapped up so well, but still very gross.
I would do the same exact thing! lol
It tastes terrible, lol.
Ours was so bad. We each ate a bite since we saved it the whole year, but then it went right in the trash. Its really dry and eh, bad. lol.

i never had mine.
