I need a good chicken salad recipie

We had a party this weekend and I made way to much chicken for the jambalaya, so I thought I would make chicken salad with what's left.  Anyone have a good recipie.  I googled it and so much came back, I didn't have anything to go by which were good/ not so good.

  • I don't really have a recipe, but I throw celery, apples and pecans in mine.  YUM!  Big Smile  I have made it with some tarragon too.

  • I don't really have a recipe with exact measurements.. we just eyeball it. Our chicken salad has chicken, miracle whip, mustard (usually just about a tablespoon of mustard, the rest miracle whip until it doesn't seem "dry" anymore), chopped celery, chopped black olives, sweet relish, and chopped hard boiled eggs. So good.?

  • Since I am at work Im not sure the exact measurements...but you can just tell by how creamy your want your salad

    cubed chicken, mayo, little bit of sour cream, chopped celery, chopped red apples, and craisens

  • I hate mayonnaise so when I was on the SB diet, I LOVED their chicken salad. You use (fat free) sour cream instead of mayo.  I usually broil my chicken ('cause I'm too lazy to wait for it to "roast") with lemon-pepper, some parsley, and a spritz of olive oil.  Cube it, toss in some celery and some very finely diced/minced red onion. Mix with sour cream, and I often add some chives.

    It tastes better when it can sit in the fridge for a bit and all the flavors can marinate together. =)  Deeeelish!

  • My favorite chicken salad is the cabbage/top ramen salad. I don't use a recipe, but this on from Google will give you an idea...

    2 pkgs. Top Ramen chicken flavored noodles
    3 chicken breasts, cooked
    1/2 head shredded cabbage
    3 tbsp. toasted sesame seeds
    3 tbsp. toasted sliced almonds
    3 tbsp. sugar
    3 tbsp. lemon juice
    6 tbsp. oil
    1 tsp. Accent
    1 tsp. salt
    1 tsp. pepper
    1/2 c. each red, green, yellow sweet peppers
    1/2 c. chopped green onions, tops too

    Basically, these ingredients, then you take the flavor packets from the soup and mix it with the oil/lemon juice/sugar to make the dressing.  Wow, this sounds really good right about now...

    Major edit: You don't cook the noodles, you just crunch them dry into bite-size-ish pieces and toss them in.

    Ohh bacon.  That is the way to get into my heart.  I think I will try this conconction!
