what kind of risotto are you making? you don't have to add wine. now if i'm making a light chicken risotto for instance i would add a little light white wine. a pinot grigio perhaps. or a chardonnay. another great cooking wine is madera. if adds a sweeter flavor to a dish.

I usually just use a cheap chardonnay. I buy the little mini bottle 4 packs to use for risotto b/c we mainly drink red so I don't like wasting most of a regular bottle. I've even used sherry in a pinch- wasn't quite as good, but still ok.
