  The "One Egg Cake" from Joy of Cooking is really yummy.  If you don't have the book, Google the recipe name - it comes up on recipezaar I think.

  WilliamsSonoma.com, search for the Vanilla Train Cake (don't worry, it works for all shapes, not just their train mold). It's really, really good.
