I know it's early but I can actually cook tonight before 6:30 since I'm at home so I thought I might make a nice meal, but I need some inspiration. The rain has let up a bit so I should be able to run to the store.

I'm simmering a beef roast in red wine with pepperoni and onion in the oven. I will add some red potatoes and carrots in another hour. I also threw together some homemade honey wheat bread that's raising still. We'll probably have a salad to go with it all.

I'm making homemade cheeseburger mac with ground beef for my DH and a friend and I'll have a vegetarian version (red meat and I have never gotten along) with tater tots. We'll have pineapple upside down cake for dessert, which I hope turns out because I have never made one before!

I'll be making a fast and easy meal, Corny Chicken Wraps. Cook up some chicken then add a jar of salsa and a can of corn and heat through. Serve in a heated soft shell and top with your favorite taco toppings.
