Several weeks back, there was a great recipe post about Beef Sandwiches that the roast was cooked in the crock pot for several hours with just a few other ingredients.
I really wanted to cook it today, and I thought I saved it to my favs but now I can't find it (maybe it's on my work computer, but I'm off today) I also used the search feature and couldn't find it.
Does anyone have this recipe or is the original poster on??

I am not the OP, but I have a recipe that is pretty good.
Italian Beef
1 boneless beef chuck roast (3 pounds)
1 t Italian Seasoning
1/4 t cayenne pepper
1/4 t pepper (I use coarsely ground black pepper)
1/4 c water
1 jar (16 oz) sliced pepperoncinis, undrained (I used mild)
1 medium sweet red pepper, julienned
1 medium green pepper, julienned
1 garlic clove, minced
1 envelope reduced-sodium onion soup mix
1 T Worcestershire sauce
2 loaves (1 pound each) Italian bread, halved lengthwise
Cut roast in half; place in a 5-qt slow cooker. Sprinkle with Italian seasoning, cayenne, and pepper. Add water. Cover and cook on high for 4 hours or until meat is tender. (I've also cooked this 8 hours on low)
Remove roast; shred meat with two forks and return to the slow cooker. In a large bowl, combine the pepperoncinis, peppers, garlic, soup mix and Worcestershire sauce; pour over meat. Cover and cook on high for 1 hour or until peppers are tender. (I've also cooked this for 2-4 hours on Low).
Spoon beef mixture over the bottom halves of bread; replace bread tops. Cut each loaf into six sandwiches. I've used small hard rolls instead of a loaf.
I have a really easy roast recipe which makes awesome leftover sammys:
add water to cover about 1/2 - 2/3 of the roast
Cook on high for 4 hours or low for 7-8 hours. The longer it cooks, the better.
MIL makes this same recipe, just tweaked a little. It is sooo good!
