I try to pump at the same interval as DS eats- so I end up pumping 3-4 times at work (but I work long days). I normally get 5-6 oz per pumping- but am getting less right now bc I was sick.
I pump 3x at work (9:30, 12:30 and 3:30 pm) I usually get about 6 oz each time, so 18 oz for the day. I pump three times b/c DD is still eatting every 2 hrs. I can't pump every 2 hrs, but pumping 3 times a day seems to be working for us. I also pump first thing in the morning and right before bed to keep my freezer stash going.

I definitely think you should be pumping 3 times. Don't stress too much about how many oz you are able to pump during your first week back. Once your body gets used to pumping more often at work, you'll probably be able to pump more. Remember to drink enough water and try to relax. (Breathing deeply can help.)
Are you pumping for 2-3 minutes after the milk stops coming? If I do that every time I pump for three days, then I usually get more ozs the next day.
During my first week back to work, I got around 14 oz a day, pumping 3 times. I now get between 18 and 20 oz a day and still pump 3 times. DD is a little over 5 months now and just starting with solids. I may drop down to pumping twice a day at work in another month or two if I see that she's drinking less at daycare once she starts eating more solids.
If you're working an 8 hour day, you should probably try to pump at least 3 times. Otherwise, you might see your supply drop. I use the short cycle on the pump (the one that it starts on when you turn it on) to get another letdown (or two) after the milk stops flowing. Compression also helps me get a little more.

I pump at 10am, 1pm, and 4pm. I get 7 oz. at 10, then 5-6 ounces the other 2 times.
