I need some new ideas for fairly simple veggie side dishes. I feel like I have worn out sauted squash, fresh green beans, and corn on the cob. I just don't have any other ideas for good fresh ideas. We live in a rural area, so our grocery is not very exotic.
I do like to cook, but with the heat it is usually 80 degrees in the house by supper time. I need something that's going to be relatively quick.

My favorite side dish:
Heat olive oil and ginger in a pan, saut? mushrooms (I like sliced portabellas) and cover about 10 minutes. Add spinach and soy sauce and stir until spinach starts to wilt-about 5-6 minutes. Not terribly complicated but delicious, in my opinion. I actually had that for dinner tonight with a sliced chicken breast.
Two more:
chop bell peppers (red, green, and whatever other colors you have available), red onion, and garlic (I'm lazy and use freeze-dried garlic). Put in aluminum foil with olive oil, rosemary, and thyme (or leave out the rosemary and thyme-still good), and throw on the grill or bake in oven.
Put a little bit of water in the a pot, add baby carrots or cut carrots. Drizzle with honey, cover and cook on the stovetop. The honey seeps into the carrots while steaming.
(I'm a terrible cook, so these are my simple go-to side dishes.)
Sliced tomatoes are good, or cucumber tomato salad. Caprese salad with tomatoes, basil, and mozzarella. A bean salad or other layered salad with veggies. Spinach salad with raisins and goat cheese or feta. Sliced avocado, although maybe that's a fruit? Lots of veggies are also good grilled, so if you're grilling meat, you could throw them on with it. Marinated lettuce:
Mix 3 Tbsp lemon juice , 1/4 cup olive oil, 1 or 2 cloves minced garlic and salt an pepper to taste. Pour over a head of chopped iceberg lettuce, 1/4 of a diced red onion and a chopped tomato. Mix it up and let sit for 10 min. Taste it again before serving, I always think it needs a bit more salt.
Also if your grilling, just throw whatever veg you have on the grill. I just cut the pieces a bit bigger so they don't fall through he grate. Toss in a bit of olive oil first so they don't stick and your good to go.
Saut a slice or two of diced up bacon, add frozen green beans and saut for a few minutes until they are tender. Add a tablespoon or two of brown sugar, slivered almonds and salt to taste. DH can eat a bowl of these, I always have to make extra.

You slice them thinly and toss in a dressing of plain Greek yogurt, lemon juice and some dried dill. It's pretty good!
Drizzle asparagus with olive oil and roast on the grill until just tender. Season with a bit of salt, pepper and lemon juice.
saute baby carrots in butter until starting to soften. Add 1/4 beef broth, 1 Tbl real maple syrup and 1 Tbl balsamic vinegar. Cover and simmer until sauce forms a glaze and carrots are tender.
