My all time favorite cover is All Along the Watchtower by Hendrix.
I love most covers of To Make You Feel My Love (orig. Dylan) and Thank You (orig. Zep).
Higher Ground (RHCP) is a great cover, too.
I had to think for a bit. I forget which songs are covers when they are better than the originals. I hope I'm not wrong about these being cover songs.

Katie Melua does a slowed down, sexed up version of the Cure's Just Like Heaven that I love.
I also like the Wallflowers cover of Into the Mystic.

Ok, just listened. Not bad, but not as good as the original or Gary Jules version.
The Gary Jules version of Mad World is totally awesome.
I like the Dixie Chicks cover of Landslide. I like the Smashing Pumpkins version, but not as much as the Fleetwood Mac version.
