Tu: Crock pot salsa & black bean chicken, brown rice, salad
Recipe? This sounds good and I'm getting bored with the crock pot recipes I have.
Ingredients:
4-6 boneless, skinless chicken thighs (you could use breasts instead)
2-3 C salsa
1 can black beans, drained and rinsed
4-6 cloves garlic, minced
1 T cumin
Directions:
Basically, you just toss everything into the crock pot and cook on low for 6-8 hours or high for 3-4 hours. Sometimes I add corn or chopped onions, too. I usually serve it over rice but you can also shred the chicken and use it in enchiladas, tacos, quesadillas, etc.

Su: DH will grill something
