I'll preface this by saying I love this name and until recently DH was not on board with it. We were trying to think of Scottish/Gaelic names, but have not found something that we absolutely love....so I keep coming back to Georgina.
Questions: Our last name begins with a "J" so would Georgina J (2 syllables) be too rhyme-y? Also, what are some nicknames that come to mind when you hear Georgina? And lastly, how does it go with DD's name, Emma?

It's gorgeous. The LN starting with J does not bother me at all.
I think it sounds fine with Emma-- so if your DH is on board, I would use it without hesitation!

I have Georgiana on our list, but Georgina is ice too. For me it would be too alliterative with your LN.
Gina and Gigi would work for NNs and both sound ice with Emma.
Not a huge Georgina fan, but I don't hate it. I much prefer Georgia. My dd is Georgia Faye. So obviously I like Georgina Mae
