I found a cake recipe I want to try for ds#2's birthday. It calls for soy milk, but ds can't have soy either. Does anyone know if coconut milk bakes well?

coconut milk that you drink, not coconut milk in the can cooks great!. I usually cook with almond milk if your LO doesn't have sensitivities to tree nuts. Otherwise rice milk works as well.
I always bake with coconut milk. I found that "SO Delicious Coconut milk - original" -the one that you don't refrigerate until it's open.. works best and doesn't have a strong coconut taste after.
I tried a ton, my son drinks silk coconut milk but when you bake with it, it tastes too much like coconut.

Yes, I cook pancakes with coconut milk and it works great.
