Prefer older names that are obscure but not weird, I love biblical names but because of our FNs and DS name I am afraid anything too biblical will make us sound like a walking Old Testament and that's not what going for!

I LOVE biblical names. DH and DS have them. My fave from your list is Abram (which is on my own short list) followed by Ezra then Luca. Your girl name are nms, but my favorite one would be Sienna.

I like August and Arlo with Gideon to avoid the OT thing.  Ezra would be my favorite biblical name on your boy list and sounds awesome alongside Gideon.  I adore your girl list.  My favorite is Elodie though Florence caught my eye too.  I do think Elodie would pair nicely with Gideon without overdoing the similar sounds.  I think Eloise, Adelaide, and Cecilia might be your style.  The latter is similar to Cecily, of course, but to my ear it flows better with Rose.  GL

those girl names are a little harder for me-   I would stay away from a place/color name if pairing with Rose.  Elodie Rose is really pretty I think..

Luca: meh. I think people who use this name are trying to name their kid Lucas but be creative. I don't know. Also, the kid I nanny goes to school with THREE kids named Luca and there are less than thirty kids that attend his school.
August Sage: NMS, but not bad.
Abram: I adore this name. Best one on your list, probably!
Ezra: Also love.
Arlo: No. Not a fan of this name at all, reminds me of a dog.
Holden: Like the literary reference! But it's NMS.
Jude: Cute. I feel like I know a lot of kids with this name, though.

The names that stand out to me are (boy) Holden, Jude (love!), and Emmett.  (Girl) Sienna or Coraline (but I really like Caroline a lot more).  

I actually really like the mn Rose, but you could change it to a variation of Rose, too.  Rosalie, Rosemarie, Rosalyn, Rosamund, Roseanne, etc.
