My DS has been on a popsicle kick, so instead of buying them, I've been making them for him. Well, I decided it was my turn. I made Mojito ones and they are amazing! I mixed limeade from concentrate. Then heated a simple syrup (1/4 c water, 1/2 c sugar) and put it in the bullet with some mint leaves. Stirred like 2 cups of limeade with the mint syrup and poured into molds. I swear it even tastes like there's rum in there. Totally hitting the craving! Just thought I'd share for those of you who are also missing their favorite poolside beverages.

DH & I were discussing popsicle recipes last night, trying to figure out what to make ahead to bring with us to the hospital. I'm allergic to most food colors, so the generic popsicles the hospital provides are out, and most "real fruit" alternatives are full of berries or have an apple or grape juice base, all of which I'm allergic to as well. My options are citrus fruits & most tropical fruits (mango, banana, pineapple, etc) and it's nearly impossible to find items pre-made that don't contain at least one ingredient I can't have. Mojito popsicles would be amazingly refreshing to suck on while in labor, I'm definitely going to make these!
