A baking question from a newb

LO's birthday party is this Sunday.  I have Friday off but I'm still shipping him to the sitter's.  If I make all my cupcakes (3 - 4 dozen) on Friday afternoon, will they still be delicious on Sunday afternoon?  Should I freeze them?  We'll be icing them Saturday night.

    This part is important. If you don't thaw them before frosting, condensation will make the frosting watery and it will slip off and get weird. 

    I did not know this.  I might go PP's suggestions of wrapping them super well and putting them in the fridge.

    So, the problem with the fridge is that it dries out the cake part, especially with cupcakes. You never want to put cake products in the fridge. The freezer really is your best bet. I should know, I'm a lawyer... er... I mean... I used to own a bakery. Insert winky face, I'm mobile.

    Ok, maybe I'll freeze them.  Just seems like they'll be in the freezer for such a short time since I'll have to wait for them to cool after baking and then take them out with enough time to thaw before icing.  But I will if it means tasty cupcakes!  I'm not the best baker to begin with so I need all the help I can get.  Lol.

    Eh I worked in restaurants for 10 years and in the pastry department for much of that a day in the fridge wrapped really well was never an issue.


    Haha, fair enough. I'm probably way too nitpicky about cake. I'm sure people will appreciate the effort either way!

    Whenever I bake cupcakes I use the bundt cake recipe that asks for instant pudding. It keeps the bread moist for almost a week even if its been left out or refrigerated and adds more flavoring as well.
