I feel like I serve the SAME thing over and over and.....over. BUT I need something fast and easy--preferably a slow cooker meal and I seem to have my "go to" tried and true recipes.
What are some of your dinners??
Sometimes I feel like maybe I'm trying too hard to have wholesome meals, but my kids eat enough crap (as do I) and feel like dinner should probably be our better meal LOL.
Would love some new ideas!!

yum---that sounds good! What are ranch style beans (I know, prob dumb question).
And I like quick!!! I'm sure most of us do. If I have to pick up the kids from daycare (which is mainly the case), then we don't get home until close to 6--which is why I like the slow cooker. BUT we're gone so long that many times the food is so over cooked.

We also do the round 2 recipe - black bean enchiladas.
I make this greek spinach quiche a lot. I make 2. We will eat one the next day and freeze the other one.

I also make black bean, zuchini and corn quesadillas.
- Saute garlic, some chopped onion and zuchini in oil over medium heat.
- Add black beans, corn and cilantro.
- Add a little bit of lime or lemon juice and salt and pepper.
I make this the night before and then the next day I use them to make quesadillas. I usually use a blend of different cheese.
Honestly, I have a lot of trouble finding healthy recipes for the crockpot that aren't a chili or a stew.
Oh. And I do ALL of my cooking at night after DD has gone to bed. Or a lot of times I will make a bunch of stuff on the weekends that is easy to freeze so that I have stuff in the freezer if I'm ever in a pinch and need a quick meal.
Tacos and chili are really easy because I use the McCormick's seasoning packets.
I marintate chicken and steak in herb and garlic lawry's marinade and then put it on the grill. I do a lot of steamed green beans with balsamic vinegar and salt and pepper as the side vegetable.
Veggie burgers are easy. So is just doing grilled cheese with tomato soup.
Personally, I think meal planning for the week is key. Ideally I like to cook or prep something sunday so monday is taken care of, 1 crockpot meal, 1 repurposed left over meal, and then I plan 2 easy <30 min. meals.
I've gotten pretty good at repurposing and it really helps. Make BBQ chicken in the crockpot - 1st night sandwiches throw in sweet potatoe fries and frozen veg when get home, 2 nights later BBQ chicken salad, and then I normally have enough leftover to put some in freezer for another time. Same with skinnytaste barbacoa beef crockpot- serve with instant rice, salsa and veg. Tacos another night. I'd invest in a crockpot with a timer that will switch over to warm.
Quick meals - spaghetti, breakfast for dinner, stir fry (prep the night before). There are tons of sites with ideas it is just figuring out how to make it work with your schedule.
These are my husband's favorite side of all time! Maybe its a Texas thing?
