Go to meals...healthy and easy but not boring...

Im not asking to much am I?  lol

Im sure this has been posted a million times, but...... I would love some new ideas on quick and easy, but not boring meals.  Its not that I cant serve up a chicken breast with some veggies, but we are trying not to order in or eat out as much, so Im thinking if the meals were good and semi kid friendly, I would be happy.

Freezer and crock pot meals welcomed.

Im a stay at home mom but still I dont want to be a slave to the kitchen.  I have a husband with a large appetite, 19 mo old and a 3mo old.

    My freezer meal recipes are my go-to meals. They prevent me from ordering in. This is a family favorite!

    One word of advice is that it doesn't cook well from frozen. It takes like 2 hrs for the middle to get warm when I stick it in the over frozen, but from thawed it takes 45 minutes or so. So I usually take it out of the freezer in the morning, let it thaw then throw it in the oven. It's really yummy and both my kids love it!

    I have made all of these, and these are regulars in our meal plans. All are very good!

    I mass produce lasagna in small pans and freeze it. I can take it out of the freezer at lunch and set the timer on my oven to come on and it's ready when I walk in the door at night.

    I also have a taco bake I do this way. It consists of spiral noodles, cooked ground beef with a packet of taco seasoning, 1 can of rotel, 1 jar of salsa, 1 can of mexicorn, and 1 block of cream cheese. Mix it together Nd put in pans and freeze.  After warm add crunched tortilla chips and shredded cheese.

    chicken fajitas. - chicken breast in the crock pot with a can of rotel and fajita seasoning. Add fajita veggies after work and shred chicken. Roll in tortillas.

    Salmon filets and grilled asparagus.

    I signed up for the once a month mom website and got some ideas but didn't like the 1 day cook the whole month thing. I would rather make 5-6 pans of something I know is good and we like and use those items 1-2 times a week. The rest of the week I try to do quick things, like tonight we had hamburger steaks with grilled veggies.

  • My favorite chicken meals are crispy ranch chicken which is dipping chicken breast in egg and then a mixture of dry ranch mix and rice crispy cereal. Bake at 350 for about 25 min. Could have with rice and veg.
    My second favorite is cheese it chicken dip chicken in egg then in crushed cheese its. Bake at 350 for about 25 min.
    Both of these I cut the chicken into strips instead of having the whole breast.
  • One of our favorites is a mexi-chicken crockpot meal.  I put 4 chicken breasts, 1 jar of salsa, 1 can of black beans, and 1 can of corn in the crockpot and cook it for 8 hrs while I'm at work.  When I get home I shredd the chicken and stir it all up.  Sometime I wrap it up in tortilla wrap or put it over rice and sprinkle cheese on top.  I also love salmon because it's really easy to bake then I'll steam some veggies in a ziploc steamer bag in the microwave.
