I don't. I hate needles. I'm not THAT scared of them anymore but I still hate them so I don't look when I get pinched. I even when I'm looking away I still close my eyes :P
When I had my wrist surgeries, I asked them to not hang that little curtain so that I could watch that, too. They wouldn't let me, and I'm pretty sure I was unconscious for most of it anyway.
I don't watch the initial poke, but then will watch the rest. I think it helps my anxiety if I can't see it, but then once it is in I realize it isn't so bad.

I usually look away while the needle goes in, then look back and watch the blood come out. I try to relax as much as possible and I am more likely to tense up if I am watching a needle go into me.
Hell to the no! I've passed out several times when getting blood drawn. I have no idea why. It doesn't hurt. Something about it just makes me woozy. I usually ask to lay down and then look away.

I definitely look to make sure they aren't doing something wrong. I once gave blood at the Red Cross and the person did temporary nerve damage to my arm.
Besides I start IVs at work all the time so it doesn't bother me at all.
