Food Allergy

allergic to sweet potatoes??

Good morning, ladies!  I have never dealt with allergies before, so I need your advice and help.  I called the nurses hotline last night and she was less than stellar in her assessment.  Luke has his 6th month check up on Friday, so I will bring it up then, but I wanted to see what your thoughts were.

Basically, around 9:30 last night, my 6 month old, Luke, woke up with eyes swollen shut.  He didn't have any rash, nothing else was swollen (not even lips or tongue), just his eyes. he was happy, breathing fine, not rubbing his eyes or scratching anything...  so I defnintely think it's an allergy, but for the life of me, I can't figure out what it is!  The only "new" thing he ate was some sweet potato, but that was about 6 hours before the symptoms showed up. I was also outside for a couple of hours (not him) so maybe he is allergic to the pollen that was on me?  Here's a kind of timeline of what we were up to yesterday and the possible allergin culprets...

2:00 - 3:00 - mom outside
3:30 - tried sweet potato for the first time (did NOT like it. at all.)
6:30 - eat a teething cookie (has had them before with no problem)
7:30 - bottle with oatmeal (it is the same brand of oatmeal that we always use - Gerber single grain.  BUT it was a new box that we just opened) (still no sign of allergy...)
8:00 - down for bed.  HOWEVER, rookie move - I forgot that I took the sheets off to wash them and didn't put them back on, so he was directly on the matress.  (allergic to the plastic?)
9:30 - awake with swollen eyes.

SO....what do you ladies think?  If it helps to know, my husband is allergic to peanuts and Luke has had bad reflux ever since he was born.  I honestly think it could have been the sweet potato, but would it take that long for the symptoms to show up?  Whatever thoughts/insight/experience you can give would be much appreciated!!  Thank you!!
