
I need to take a side dish to my niece's 1st birthday tomorrow. It is a lunchtime party. I am busy all day today, and H will be working tomorrow so I will be on my own with DD. Any suggestions for an easy dish to throw together? Minimal chopping and cooking would be awesome.

Scalloped Pineapples
1/2 c. evaporated milk
1/2 c. melted butter
2 c. sugar
3 eggs, beaten
1 lg.
I make a pasta salad that always seems to be popluar when I bring it places.
It's 1 big and 1 small container of cheese tortellini, cooked
A jar of sundried tomatoes, chopped up
A can of artichoke hearts, chopped up
Feta
I can never seem to cook alone when my insane 2 year old is on the loose.
If it was me I would go to a delicatessen and get a side.

For a cookout, my go-to is broccoli salad:
6 cups raw broccoli
1 red onion
1 cup sunflower seeds
1 cup raisins
For the Dressing (mix together then pour over salad):
1 cup mayo
1/2 cup sugar
1 tbsp v
I would make a pasta salad tonight and stick it in the fridge.
cooked pasta, drain, and add any of these items:
mini pepperoni
cherry tomato
olive slices
diced onion
sliced/diced green/red/orange peppers
mozzar
