ITK baking question

Hi! I hope you dont mind a NCDR question! I made the champagne cupcakes this weekend. I made a strawberry cream cheese frosting to go on them. But for some reason, every time I make frosting at my moms house, it ends up super thin and will not set up. My recipe was 1 stick butter, 1 stick cream cheese, 3 to 5 cups powdered sugar, one half cup diced strawberries and some vanilla. I usually use as little sugar as possible since frosting is usually too sweet for me. But even after the full 5 cups of sugar, this would not set up. Any ideas?
I always use a stand mixer. Would the fact that my mom only has a hand mixer make a difference?
I have also wondered about humidity, but it is less humid where my mom lives and I would think the drier air help not hurt in this situation.
They still tasted delicious! But it was really hard decorating Easter cupcakes with liquid frosting.

  • You could of set the frosting in the freezer or fridge for a bit to have the butter and cream cheese solidify. Then whip it with the hand mixer really quick before frosting. I've found that typically it's easier to make frosting when it's cooler that way

  • I tried that. I had to freeze the frosting in the piping bag for 15 minutes between every couple of cupcakes. Even after freezing the frosting for an hour it was too thin. As soon as I touched it, it just melted.

  • Was it regular cream cheese not the less fat kind? Real butter?

    Were the strawberries wet from cleaning them?

  • I usually use more butter than one stick, I think, when making cream cheese frosting with a liquid base. I have never found a strawberry cream cheese frosting that isn't runny but is still flavorful. I usually make a strawberry sauce and don't used diced
