Gluten-free Question

I need help from any gluten-free experts.

My BIL's girlfriend has to eat gluten-free. I think she has Celiac disease, but I'm not 100% sure.

We're hosting Easter and I would like to make sure that she can eat most of the main dishes. Problem is, I have no idea what has gluten.

I plan on making aspargus risotto, this isn't the exact recipe, but looks pretty close. Is is gluten-free? I think it is, but I really have no idea.

  • DH is gluten free.  I would just be careful of anything you get that is packaged/not a single ingredient.  For example, I would double check the broth you buy.  When flavors are added there is often times gluten added as well.  It is a

  • Pre-shredded cheese has cornstarch or flour added to prevent clumping. That could result in gluten (for example, if flour is added).  I'm not sure if parmesean is the same way as it's a hard cheese, but I would buy a chunk and shred it myself just to

  • Looks OK, but do check the broth (most soy sauce is not OK, and that's sometimes an ingredient), and with the butter, don't use anything that has touched a knife that has been spread on bread (anything with the potential for hidden little crumbs). It's

  • A friend of mine has celiac so she created a great GF blog.  Here's a link to her recipe page.  It may help with dinner or any other GTGs you have.
