What to do with pineapple

DH "couldn't resist" the two dollar pineapples. We have three.

There's got to be some kind of meal I can use these for. I've got chicken frozen I could thaw, or some browned ground beef.

Any ideas?

I'd make pineapple upside down cake or a fruit salad.

Chop and freeze for smoothies, salsa, fruit salad, chutney for fish chicken... Eat it fresh, I can eat a whole one in 2 days. The list goes on

Blend it with yogurt & honey. Freeze to make popsicles.

We did turkey burgers with a pineapple/bbq sauce "salsa" and they were delicious! We also like to dice pineapple up and get it a little dry and put them into blueberry muffins.
