DS is still in a 5pt harness, his seat is installed with the seat belt. When it comes time to switch him to a booster using the seat belt...what do I do with the seat?
I thought I would install the seat with the LATCH and tether to keep it secure in the car and the seat belt would protect him in a crash. Is this right? Or is the seat just sitting there, with nothing 'holding' it in place? I would think in a crash it would move around a lot and the seat belt would have to protect DS and keep the seat from moving in the vehicle.
How do I do it?

I'd read your manual since each seat will be a little different.
We have two Recaro high back boosters. Neither has latch, so DD1 is just buckled into the seat. If she's not riding in it, I buckle it in so it doesn't move around if we were to be in an accident without her.

There are seats that allow the use of LATCH when being used as a booster (some combination seats and some dedicated boosters) but it's not an added safety thing really. It's more of a safety against an unoccupied booster becoming a projectile in a crash and hurting other passengers. Otherwise you're supposed to have the kid (or yourself) buckle it in every time they get out of the car.
Yes, the booster will move in a crash if it's not latched in, but that's not unsafe. It's designed to move with the kid and offer them protection by doing so.
