I have never replaced sugar with honey but I'd like to try it. I want to make oatmeal cookies. The recipe calls for 1/2 cup sugar and 3/4 cup brown sugar. Can I replace both with honey? If so, would it just be 1 and 1/4 cup of honey? [I think I added those fractions correctly...]

I agree with the PP in looking at recipes that use honey as the sweetener first... You don't need NEARLY as much honey as you would sugar in a recipe as the honey has a higher sweetness level than sugar would.
