DH and I have been having a heck of a time trying to find an infant car seat that fits in his 2007 Subaru Legacy. The biggest challenge is that I am tall (5'11", DH is 5'9") and we have a 5 y.o. who sits in a booster. We went to BRU, tried a whole bunch and the Chicco Keyfit 30 *seems* to fit the best, but not without us pushing our seats up and cutting into our legroom. The Chicco Nextfit coming out in late March seems promising, but not sure since we can't try it out till it's released. Anyone have any recommendations? Why are infant car seats so darn big? TIA!

You might look into the Radian with angle adjuster or Graco Headwise/Size4Me/MySize when it's time for a convertible, in that car, given your stats. I'm sure the Foonf would work too, but that's a sticker shock.
I usually see the chicco keyfit rec'd for fitting into smaller cars, but if you want an even shorter front to back seat, look at the Cybex Aton. It's a newer infant seat here in the US and is a few inches shorter than the keyfit!
Infant seats are big because of the base and the necessary recline. If you want to go straight to a RF convertible, most of them actually take up less space than an infant seat.
We have an '05 Legacy, and we have a Maxi Cosi Pria 70 installed behind the passenger seat at the infant recline with the seat almost all the way back. It's a convertible seat, but is highly rated even for newborns with the infant insert.
