Here is the Mexican chicken casserole, if you were interested. It's NOT diet friendly, so it's a special treat these days!
Chicken Breasts, cooked and shredded
1 can Rotel tomatoes
1 can cream of mushroom soup
1/2 cup milk
Freshly ground pepper
1 can refried beans
1 cup shredded Mexican cheese
Tortilla Chips
Cook chicken and shred. Combine with tomatoes, soup, milk, and pepper.
Layer in 8 x 8 pan:
chips, beans, chicken mixture, cheese. Bake at 350 for 20 minutes.
Use 5 chicken tenders, or 2-3 chicken breasts for dinner for
two. To cook a 13x9" dinner and serve (more than) 4, use 10 chicken
tenders and double the other items. Serving suggestion, cornbread.

Shortcut Chicken Cordon Blue? 1 tbsp butter2 cups diced cooked chicken (from freezer)1 can cream of mushroom soup2 tbsp water2 tbsp dry white wine1/2 cup swiss cheese, shredded1/2 cup cooked ham, diced (from freezer)4 cups cooked egg noodles
In a medium skillet over medium heat add soup, water, wine, cheese and ham. Heat to a boil, stirring often. Add cooked chicken to pan. Reduce heat to lo, cover and cook 5 minutes or until chicken is heated through, stirring occasionally. Serve over cooked egg noodles.

Hash Brown Soup 1 sauteed onion (from freezer)3 cans chicken broth1 large bag frozen Hash Browns1 can Cream of Celery Soup (substitutions)1 can Cream of Chicken Soup (substitutions)1-1/2 cups milk1 pound Velveeta Cheese
Combine onion and broth, bring to boil. Add hash browns, bring to boil. Add soups (don't dilute) and milk, bring to boil. Add Cheese. Heat until cheese melts. Optional, serve with bacon bits on top.

32. oz package frozen Tater Tots1/2 lb. browned ground beef, thawed (from freezer)16 oz. container sour cream1 cup shredded cheddar cheese1 can cream of mushroom soup (substitutions)1 can cream of celery soup (substitutions)4 oz. can mushrooms, drained1 pkg. sauteed onions, thawed (from freezer)6 oz. can French fried onionsPreheat oven to 350?F. Grease a 9x13 casserole pan. Place frozen tater tots in bottom of pan. Sprinkle beef over tater tots. In a bowl, mix sour cream, cheese, soups, mushrooms and sauteed onions. Pour over beef. Top with French fried onions. Bake for 50-60 minutes.??
