i'm going in for my 3 hr glucose screening in the morning. so i'm also looking for a filling but healthy meal idea for tonight that won't give me biased results in the morning.
i was thinking maybe a pasta dish? or something with chicken? (although i'd have to decide that soon since i didn't take it out of the freezer..LOL )
any suggestions?

We are having taco salads for dinner tonight. I'm not sure how that would affect a glucose screen, but I think it's pretty yummy.
We do a garden mix lettuce, tomato, avocado, black beans, corn, ground turkey with taco seasoning, salsa, with optional sour cream, shredded cheddar, ranch and a few corn chips.

i was going to do fried rice but 1. i can't find my recipe and 2. last time we had it i wasn't really full for long..
