I seem to always have at least a few drops coming out. I know some people say to pump 5 minutes past when milk stops, but if I did that I think my nips would fall off.

Agreed. Mine never seem to get empty, but there is a point when the milk looks like it's slowly down. Either that or I have as much as I need or can stand for one sitting, and then I turn it off.
this was the theory I was told to... But like you said I'd be here for 5 hours and in some nasty, raw pain if I did that!
I got about 6 ounces of each side and then quit... And I just fed the baby an hour ago so i was shocked that i had so much in there! I'm glad I can make myself an nice freezer stash but I don't want to need to pump every hour on the hour because I created too much of an oversupply
